Matthew Knies spent two full seasons playing for the Tri-City Storm in the United States Hockey League (USHL). During that time, he scored 31 goals and provided 56 assists in 90 games. He was drafted by the Toronto Maple Leafs in the second round, 57th overall, during the 2021 NHL Entry Draft.
At the 2022 World Junior Ice Hockey Championships, Matthew Knies represented the United States. He played one game before the tournament was canceled due to the COVID-19 pandemic. Later, on January 13, 2022, he was selected to join the United States national team for the 2022 Winter Olympics.
On April 9, 2023, Matthew Knies signed a three-year contract with the Maple Leafs to begin his professional hockey journey. When he arrived in Toronto, team captain John Tavares welcomed him into his home. Matthew Knies made his NHL debut on April 10 in a game against the Florida Panthers.
