At the 2022 World Junior Ice Hockey Championships, Matthew Knies represented the United States. He played one game before the tournament was canceled due to the COVID-19 pandemic. Later, on January 13, 2022, he was selected to join the United States national team for the 2022 Winter Olympics.

On April 9, 2023, Matthew Knies signed a three-year contract with the Maple Leafs to begin his professional hockey journey. When he arrived in Toronto, team captain John Tavares welcomed him into his home. Matthew Knies made his NHL debut on April 10 in a game against the Florida Panthers.

During a home game against the Pittsburgh Penguins on December 16, 2023, Matthew Knies achieved a Gordie Howe hat trick. He scored a goal, battling against John Ludwig within the first five minutes of the match, and assisted on Max Domi’s goal in the second period.
